You’ll also spendless time preparing special-order dishes. To be sure of consistently good results, remember a fewsimple guidelines. How Microwave Ovens Heat FoodAll food and liquid molecules have positive and negativeparticles which are in constant, but slow, motion. (Positiveand negatives attract and repel each other like magnets.)In microwave cooking this molecular action is thenaccelerated. The instant microwaves bombard food theyagitate the molecules. Agitation causes friction asmolecules rub and bump into each other at a increasedrate. Friction results in heat that cooks food and boilswater.Once the microwaves stop, this friction action continuesby itself, eventually tapering off and returning to normalmolecular action.Microwaves penetrate food to a depth of ¾" to 1½". Ascooking begins, heat is spread by conduction to theinterior portion of the food just as in conventional cookingmethods. Your microwave oven features variable powersettings that allow you to choose the speed at which foodcooks.Food VariablesMicrowave cooking can be directly affected by differentfood variables. The shape of foods can greatly affect the amount ofcooking time. Foods that are flat and thin heat faster thanfoods which are chunky. For example, a casserole willcook faster in a flat dish, rather than if heaped in a smalldish. Foods cut into small pieces will cook faster thanlarge-shaped foods. Pieces should be of a uniform sizeand shape for more uniform cooking, or the smaller pieceswill cook faster. The greatest amount of heating takesplace within ¾" of the food’s surface. The interior of largefood items, or dense foods, is heated by the heat con-ducted from the outer food layer. The most uniformheating occurs in flat, doughnut-shaped foods. For bestresults, cook foods together which have similar sizes andshapes.
9The quantity or volume of a food can affect the amount ofcooking time. As the volume of the food is increased, thetime required to cook or heat the item increases almostproportionately. If twice the amount of food is placed in theoven, it will take almost twice as long to cook. To deter-mine the time for larger quantities, multiply the individualserving time by the increased amount, then reduce thetotal heating time by about 20%.The density of foods can greatly affect the amount ofcooking time. Porous foods, such as breads, cakes orpastries, will heat much more quickly than dense meatsof the same size. Porous foods absorb microwavesquickly throughout. Meats absorb microwaves mostly atthe exterior surface, and the interior is heated by conduc-tion, increasing the cooking time. Meats can be cooked ina sauce, if desired. Due to the moisture content, a saucewill heat rapidly. The heat will transfer to the meat, so themeat will heat faster due to heat by conduction as well asby microwaves. The starting temperature of foods affects the amount ofcooking time. Each temperature degree that the food itemis to raise must be supplied with a definite amount ofenergy. Lower initial starting temperatures require moreenergy and more time to cook. Therefore, refrigeratortemperature foods require a longer cooking time than doroom temperature foods. Foods already slightly warm willheat very quickly in the oven. The moisture content of foods affects the amount ofcooking time. The higher the moisture content is in a foodthe longer the amount of cooking time. The fat and sugar content of foods affects the amount ofcooking time. Foods containing high fat and sugar levelsheat very quickly and may reach much higher tempera-tures than foods having low fat and sugar levels. Foodshaving lower fat and sugar levels require longer cookingtimes. The arrangement of food within a microwave oven cavityaffects the way in which the food cooks. A “round”arrangement is best. Use round utensils wheneverpossible. Also, arrange foods such as baked potatoes ina circle, rather than in rows, for cooking. When only onefood item is being cooked, place it in the center of theoven glass shelf for cooking.Manipulation of FoodsSometimes recipes suggest manipulating or moving foodduring cooking. There are several forms of manipulation:Stirring is required less often in microwave cooking thanin conventional cooking. In conventional cooking, you usea spoon to move food up from the bottom of a pan toevenly distribute the heat. In microwave cooking, you stillstir to redistribute the heat within some foods, but youneed to stir from the outside of a dish toward the inside orcenter. If a recipe states to stir once or twice duringcooking, stir at approximately even intervals. For ex-ample, in a 12-minute cooking period, if a recipe states tostir twice, stir after 4 minutes of cooking and again, after 8minutes of cooking. However, it is not necessary to beprecise. Stir only when necessary. When using lowerpower levels or settings, less stirring is required. Someexamples of foods which may require stirring are pud-dings, some casseroles, some sauces, some soups, andsome egg dishes. Some foods can’t be stirred. Thesefoods are rearranged or turned. Some foods can’t be stirred and should be repositionedor rearranged during cooking. Some examples includebaked potatoes, cupcakes (in custard cups), andchicken pieces. Rearranging allows for more evencooking of foods. Foods which are cooked, covered orwhich are cooked using lower power levels, usuallyrequire little rearranging. There are actually two types of turning. Turning is donewhen foods cannot be stirred. Foods which are cooked, covered or which are cooked at lower power levels usuallyrequire little turning.Turning foods over: Turning foods over is done todistribute heat. Meat and poultry are two types of foodswhich are sometimes “turned over.” Examples includeroasts, turkeys and whole chickens. Small meat itemssuch as poultry pieces may need to be turned over whenin casseroles, or when in a browning skillet.
10Microwave UtensilsCAUTION!To avoid burns, use protective gloves or pads whenremoving dishes from oven. Some utensils becomehot while cooking.Never use cooking containers or covers with any metalcontent. This includes all metal and enameled metal-core ware, foil, and metal-trimmed containers. Suitableheating containers include those made of paperproducts, glass, china, cloth, and wicker baskets.Recommended Not RecommendedGlass/ceramic Aluminum foilNatural fiber cloth Grocery bagsNon-recycled paper Recycled paperPlastic Lead crystalWood NewspapersMetalMetallic trimmed chinaCooking HintsCover foods for faster, more even heating. Glass lids, plastic wrap, plate covers or other paper products may beused. Do not seal. Instead, allow for steam-venting at alltimes.Pierce pouches, plastic wrap covers and all foodswith a thin skin or membrane, such as potatoes, squash, tomatoes, eggs, etc. This prevents an eruption in the ovenand allows for expansion and/or the escape of steam.Foods should be carefully arranged. For best results, arrange food such as vegetables or casserole-type itemsevenly around the edge of the plate with slightly lessdepth in the center. The edges of food items should notoverlap or overhang the rim of the container. Cover meatswith gravy or au jus and moisten all dry foods other thanbread or pastry items.Do not stack food or plated dishes in your oven.Instead, when heating more than one serving or platters, all plates should be placed at the same level in the oven, with space between all containers.Oven FeaturesA—Window Door ScreenB—Splatter ShieldsC—Electronic ControlD—Door Open ButtonE—Safety Door Lock SystemOven FeaturesDEABC
